In the village of Saint-Père, along a little creek to the southeast of Vézelay in Burgundy, a quiet, peaceful revolution is taking place. This part of Burgundy has been producing wines for centuries. On the palate the wine is light and crisp with racy acidity and a piercing finish. Pair this Sauvignon Blanc with goat’s cheese, asparagus, vegetarian dishes, spicy Chinese food, white fish with lemon, ceviche, and just about anything with a sharp citrus component.
