In the village of Saint-Père, along a little creek to the southeast of Vézelay in Burgundy, a quiet, peaceful revolution is taking place. This part of Burgundy has been producing wines for centuries. Domaine de la Cadette now produces from thirteen hectares of land today, and has been farming organically since 1999, receiving their certification in 2002.
In this cooler climate, their vines enjoy great sun exposure, lending a balance between generous fruit and deep mineral structure.

The Chardonnay opens with a yellow-green straw color and luscious aromas of ripe pears and fall apples; a slight hint of vanilla bean sneaks past. The wine coats the palate with a rich and round texture, flavors of citrus and orchard fruit, and leaves behind an acidity that keeps the palate fresh. Try it with spinach ricotta pie, lemon and herb roasted chicken, and spicy baked shrimp.
The Touraine appellation d'origine contrôlée (AOC) is found in the central Loire river valley and is known for producing Cabernet Franc and Sauvignon Blanc. As a close neighbor to Sancerre and Pouilly-Fume, Touraine produces wonderful examples of Loire Valley Sauvignon Blanc at great value.
The Touraine from Chais Saint-Laurent offers fantastic value while delivering typical characteristics. The Touraine opens with a very light straw color with hints of green, indicating its cool-climate origin. The nose offers citrus, hints of grapefruit, and a mild vegetal grassiness that can only be described as English peas. On the palate the wine is light and crisp with racy acidity and a piercing finish. Pair this Sauvignon Blanc with goat’s cheese, asparagus, vegetarian dishes, spicy Chinese food, white fish with lemon, ceviche, and just about anything with a sharp citrus component.
"Napa Valley and Carneros had an especially cool 2010, which delayed the start of the growing season. A brief, late-season heat spike pushed ripening the other way, resulting in some areas having both ripe and not-quite-ripe fruit.
